I have only contacted both directors on this topic. I haven't tried contacting anybody else though.

If I’m honest, hearing what was described (mostly alternate scenes), I think it’s safe to assume this is one of those movies in which at least one deleted scene has at least two or more variations of the same scene.
Not to shut anyone down, and not trying to be a dick here, but I’ll just have to point out exactly how realistic this goal of assembling an alternate cut really is.
It’s not impossible (and I think I might have something wrong, so correct me if so) if you say, try reaching out to the films editors and other crew members and look through workprint trading communities, maybe some bootleg copies too like we did with Flushed away.
However, your current method (If I’m understanding this correctly) involves taking shots from demo reels and stitching them into the final movie, if not even completely reconstructing the film from the ground up with these demo reel clips, so sorry to say, but inevitably you’re not going to reach that 90-minute goal. I’m sorry.
However, taking into account the other ideas (workprints, bootlegs, and contacting crew members), you might have better luck then, and who knows, maybe you’ll even surpass your original goal.

There is indeed proof of workprints of the film. I don't know if trading communities have them though.
Ok, so from what I've heard, Seinfeld rewrote the screenplay many many many times (Around 87 drafts). Some of these rewrites were as late as August 2007. Now the thing is, these rewrites were not for the story, they were for the jokes. Production was hell because they would work on a scene, storyboard it, and even render it... only for Seinfeld to rewrite it. In behind-the-scenes videos, they show finished alternate scenes that were cut because Jerry thought of something better. Now, you're probably thinking about that cut character that there's concept art for, that character was part of a joke that was cut. So they're lost scenes from this movie, but they're mainly alternate scenes. (btw sorry for responding late. I stayed up for Adult Swim's April Fools event and then passed out after that.)

Did you know that there might be more lost media regarding this film that are not in scripts?
The voice actors would commonly adlib the lines in the film. That could be there where lots more things in the earlier scripts that could have not made it into the final product.

Yeah, this is definitely one of those films where at least one deleted scene has multiple versions of that same scene.
(We need to come up with a name for this kind of deleted scene, in which an earlier, alternate version was made before it was then changed, reshot or shortened, before then being cut entirely.)
