So I was browsing FUNimation's old website and in the "funabout" page I found that one of the properties they owned the rights to was something called I-Man. While I was able to find at least something about Cyboars and Morris Brothers, I have not yet found anything about this specific thing they owned the rights to, and I'm pretty sure it's not the 1986 Disney film.

Have you considered emailing them and asking them what it is? I'm not trying to sound patronizing here, this doesn't occur to a lot of people. The brand still exists so maybe it's somewhere in the Crunchyroll archives?
Alternatively, it could be the anime franchise "8 Man".

Yeah, e-mailing them is probably the best bet to finding out what I-man is. As far as the theory of it being 8 Man goes there's no confirmation anywhere that Funimation licensed it. www.animenewsnetwork.com/encyclopedia/anime.php?id=665

No, and I don't think I will (at least not anytime soon). And considering how much FUNimation has evolved drastically through the years, they probably would have forgotten about Cyboars or Morris Brothers, let alone ever having a clue on what their I-Man is. But anything's possible.
