I did a little digging and based off what OP said about finding them originally on instagram and them being from Dallas area it could 1 of 2 stadiums.
AirHogs Stadium of the Texas AirHogs in Grand Prairie, Texas
Or
Dr Pepper Ballpark (formerly Dr Pepper/Seven Up Ballpark) of the Frisco RoughRiders in Frisco, Texas
It seems to be the Dr Pepper Ballpark based on cross referencing images of the stadium to the picture OP posted and although both are in the Dallas area, AirHogs Stadium was not open until 2007 while Dr Pepper Ballpark opened in 2003 which fits the time of 2005
Could be the RoughRiders, they were the ones who had Nickelodeon Night back in 2019.

Doing a bit more digging and it turns about about 5 or 6 minor league stadiums had a Nickelodeon night and there was even a Minor League Nickelodeon Night Tour that happened over about a month long a while back. It seems like this puts more evidence on it being official instead of a one off unofficial thing.

Oh yeah I brought up the tour a few pages back too. Honestly that's why I was convinced it wasn't a bootleg thing, especially since Nickelodeon Night happened for a minor league team like the rough riders.
For context, I'm from Albuquerque and our team is the Albuquerque Isotopes, it's decked out in official Simpsons statues and posters and such and they're minor league.

Do we know the years these Nick Nights happened in the minor league stadiums? This could narrow it down

The only thing I know about is the 2019 one. Honestly, could we just contact the Rough Riders stadium and ask how long they've been doing Nickelodeon nights for?

Do they have contact info on their website or something?

The website link shows some individual employee contacts as well. Now I may be wrong, but here is a list of employees on that contact website that were in the company prior/in 2005 (year OP saw the Spongebob short) according to the short bios with their name:
Breon Dennis, VP of Community Development Erik Haag, Chief Business Development Officer Chuck Greenberg, General Partner and CEO
There was a marketing person on the website as well I will list here (joined after 2005):
Jennifer Johnson, Director of Marketing (Joined in 2018)

I just looked at Chuck Greenberg and he actually started in 2014.
Scott Burchett, Chief Operating Officer has been with the team for 14 seasons, 2019 beeing the 14th season and 2005 being the 1st, that you missed.

14 years ago is 2006. Or does seasons run differently? I assumed 14 seasons meant years

Ah I saw your edit. Should we try contacting Scott? And what should I say about this?
Yes that's a good start. He did work in the areas of corporate partner services, food and beverage, and merchandise. Could ask if he knows anything about Nickelodeon Nights or Nickelodeon merchandise and see if he remembers any events that specifically involved Spongebob Squarepants and/or special videos they played on there jumbo tron
