I found a baseball game from 2017 called Nicktoons MLB. Spongebob is in it, so I think it is possible that MLB could have had the rights to use Spongebob for a while

I can't find anything about the Incredibles doing a license with MLB. Do you know if Scooter was featured in Texas, as the OP said he saw the Spongebob in Texas

As for the Tom Kenny connection, I dunno if you saw but I did mention that Tom Kenny had a bumper on Nickelodeon where he was demonstrating how to the Spongebob voice but used various takes of him singing "Take me to the ball game" which seemed like a weird choice? I know the only connection here is Tom Kenny and that song being a baseball classic, but could it have been for this official thing? Especially since it seems Nickelodeon has some kind of working relationship with the MLB for a game to be made, and for there to be a Nickelodeon night? What we should look at is how the video game came about, maybe we'll get insight in how long the two partnered for, since both the game and Nickelodeon night are pretty recent.

Honestly I believe OP saw something Spongebob related at a ball game, and that it isn't necessarily Mandela effect. But yeah all we can do it wait for OP to respond.
