The following images are various production materials and/or concept art from 2004's Scooby-Doo 2: Monsters Unleashed. Many of these were for monsters that ended up being cut from the final film or monsters who's statue/costume have yet to see the light of day.
I did not take any of these pictures/screenshots. These were all gathered from a thread on the Scooby Doo Wiki forums, IMDB, and various Google searches.
Early prototype/test costume for The Black Knight Ghost
Captain Cutler
Chickenstein. Who was one of the monsters planned to come to life in the film (yeesh, talk about nightmare fuel).
The Cotton Candy Glob
The Creeper. One of the monsters meant to be brought to life in the film. It was once for sale on an online movie prop auction.
Dr. Coffin (yes that is blood on his costume)
The Ghost Clown.

The Headless Horseman. Who, despite appearing in various promotional materials and in a couple theaters during the movie's release, doesn't show up in the final film. Apparently, there was a scene where Shaggy kicked his head off.

An unidentified purple monster. You can't see it here, but he/she has a glowing red chest.
The Mermaid, one of the few monsters to not have an animated counterpart. With others being a "Warrior Woman" and the unknown purple monster.

An unused character model for the Indian Witch Doctor. Taken from the files of the SD2 PC game. Maybe that means he was in the film at some point?
The Tiki Witch Doctor, also meant to be brought to life. Though he does make an appearance in the GBA game.
Zen Tuo (screen brightened for better visibility). It's a bit hard to tell, but it looks like his mask is made out of green jade instead of the original gold one.

Monsters weren't the only thing cut from Scooby-Doo 2, there were also a couple scenes that were removed or changed as well. Including the aforementioned Shaggy/Headless Horseman scene, there were scenes that were cut from the theatrical version because of supposed drug references (this was most likely done to avoid a similar incident with the first film's production). There's a "Netflix" cut of the film which replaces all advertisments and/or mentions of Burger King with KFC, though it's hard to find any visual evidence of this online.
