this might be a stretch but I wouldn't be surprised if there were some earlier versions of Pokemon episodes post Porygon incident that had their flashing lights removed or something. I mean OLM probably had to animate episodes ahead of time so idk??
There actually are in fact, the website Dogasu's Backpack has a whole section on them, apparently 4Kids were accidentally sent a few of the pre-Porygon versions of the early episodes. Also all but the first episode(which apparently has like six different versions, with the original uncut version reportedly only being available on a Japanese rental-exclusive VHS) are available in their pre-Porygon forms on the Japanese version of Hulu.

I believe B.O.O.: Bureau of Ofherworldly Operations had a “Scoob Holiday Haunt” situation where the films visuals and animation was continually worked on and completed even after it got cancelled, mainly by the (probably few) people who animated on the movie and didn’t get let go from Dreamworks, judging by some unfinished renders turning out to have a more fully-rendered version (namely Gooball Greg getting sucked into the Ghost-Hunter 3000).
It’s probably this cut that would get leaked if such thing ever happened, or if it really exists.

Another one I know exists is the original TJ. Miller cut of How To Train Your Dragon: The Hidden World. According to the films director Dean Deblois, his performance had already been fully recorded and animated before it got removed from the film and Justin Rupple was brought on board to overdub Miller’s lines, and nothing from the original cut has surfaced.
I hope some kind of workprint exists from when TJ was in the film that can somehow get leaked if dreamworks gets hacked or something.

On a similar note Aladdin and the King of Thieves had Dan Castellanetta reprising his role as the Genie from Return of Jafar originally and his performance had been fully recorded but in order to win back Robin Williams Disney agreed to let him redub the Genie. I'm they got Robin back and everything but part of me still wants to see the original performance.

I'm convinced someone was making off air recordings in possibly cylinder or acetate disc format of a lot of stuff that could be heard off shortwave radio in the 20s and 30s. This also includes early TV, as early TV used the shortwave band as the audio carrier frequency.
I do have proof for the first part as its how we have recordings of a lot of early radio broadcasts, including King George V opening the British Empire Exhibition in 1924 and Woodrow Wilson's 1923 Armistice Day speech. I don't really have any proof for that last part except that I really really want to hear what The Television Ghost was like.
Your Favorite Martian's unreleased album. Your Favorite Martian creaotr, Ray William Johnson, claims it doesn't exist and that he left the YFM before any real work was done for the album, but this directly contradicts what fellow contributor of the project, Jessie Cale, has said about the album. Jesse claims the album was in it's "final stages" before the project was dropped. Ray's comments also contradict what he said about the album around the time Your Favorite Martian went on hiatus, like how it was in development for around six mouths by the release of their song Boom Headshot.
Considering Ray had such a negative experience with Maker Studios, the company he worked with to produce Your Favorite Martian, I suspect he wants to move on and forget about his time the working the album. Ray admitted certain songs got as far being written, and, like I said, Jesse claims that the album was close to finished, so there has to be, at the very, demos for songs recorded for the album. There has to be some kind of content for the album that exists in someway that's currently lost. But, that's just what I suspect.
Peter Criss's unreleased 2000s rock album, according to his autobiography the music tracks were all done and all that was left was the vocals but then both Peter and his wife got breast cancer and that caused the recording to have to be put on pause. Given how much time has passed since then I imagine he would've had to have had time to have finished the vocals at some point.
