So I was looking through credits on IMDB and noticed something I've never heard of before. An animated series called Midori's Nintendoland Bakery, which IMDB says only has one episode. It supposedly aired on Nick Jr. from 2004-2007. I tried looking for more information and found nothing besides a few articles mentioning its existence in writing about the passing of one of the voice actors. Is this some kind of odd hoax/fake IMDB listing, or is this real and just has little to nothing online about it?

While IMDB says the show aired from 2004-2007, it says the first episode was released in 2005, while the Forbes article says 2002.
Are you sure this is actual lost media? Because, I did some sleuthing and Googled "Midori's Nintendoland Bakery" and found out it's fanmade.

The video containing the logo. Noticed anything familiar? That's because this is an edit of the logo for "Alice's Wonderland Bakery". It's not even a Nick Jr logo they used. It's just a fake logo for a non-existent version of Nickelodeon. Now get a load of these videos.
Yep, called it. Fake logos made by a kid. Most of these shows in the logos didn't even exist yet, which contradicts the 2005/2004-2007/2002 premiere of the series. And now, the most shocking revelation of all time.......
Yeah this is evidence that the series is nothing more than a fake edit of "Alice's Wonderland Bakery", even down to the "synopsis" of the series.
Obviously, this is Saki Sanobashi all over again. A series that someone thought it existed, only to reveal it's nothing more than a fake. Someone, get Snopes on the phone. I thought it was a hoax, but I thought it was interesting how it was referenced on legit sources like Forbes and USA Today. Whoever created the fake IMDB page/the fake videos has managed to fool legit new sites including doing so in articles about something as serious as an actor's passing. I wonder where Forbes got the 2002 date.
There's references to this outside of a single forum post, so it's not the same as Go for a Punch. It's probably a hoax, but one that has somehow managed to fool multiple news outlets.
