Growing up, my family owned these “Childcraft” books, some of which were collections of kids’ stories. The covers featured various characters who appear in the stories. However, at least one seems to be from a story that wasn’t included.
See the sea-monster/dragon with the bread and jam at the top of the cover here? Whatever story it’s from isn’t included in the book. I’ve always been curious about what it’s from. It must be from something, since it doesn’t make sense that they would include something original, especially something with a rather unsettling design. However, I haven’t been able to identify the story, so I thought I’d bring it up here.
"There's No Such Thing as a Dragon" did have a dragon who ate bread, tho his design didn't look like that.
You might be on to something there. Some of the stories in this compilation book included original illustrations, the most memorable case being an Amelia Bedilia story, in which the main character looked NOTHING like most depictions of her. There’s even an image from it on the back.
So hypothetically, it’s possible this Jack Kent story was meant to be included in the book, with illustrations possibly having been made. Still, it’s hard to say.

That’s what I originally considered. The original Silverstein book the poem is from has a dragon that’s similar to a sea-serpent too, although it otherwise bears no resemblance whatsoever to the one on the cover of the Childcraft book (even the expressions are different).
I also tried looking up the cover illustrator in case she remembers but it doesn’t appear there’s any way to contact her.
