This man-Edouard Beaupre is supposedly the tallest pro wrestler to exist, I am wondering if there would be potential footage of him wrestling, I am guessing it be around the early 1900s. Cause I know some silent films survived but like sports footage is what I am asking for.

I can't find an entry for him on IMDb, and the Internet Archive is a dead end too. It's possible that he was never filmed wrestling, but I can't say for sure.

This is the first time I'm also hearing about it this as well. It would be very cool if something was filmed and it's just lost to time, even just seeing photos would be worth preserving. Have you had any luck with asking around the history or wrestling related subreddits? Perhaps someone there would have some info that could help.
Are there any museums in Canada that memorialize oddities or "circus freaks"? Honestly, I don't know if any footage would exist, but if it did, I assume it would exist in context of museums such as that. I doo think it is highly unlikely that he was filmed wrestling. Maybe it would have been more likely if he had lived into the '20s.
