Fellow Canadian here, honestly there’s so much lost Canadian shows, commercials, etc that I feel don’t get enough attention that they deserve.
A few of my notable childhood ones include:
-My Special Book
-Chip ‘n Orbit
-Max The Cat
-It’s Itsy Bitsy Time (Canadian Version)
-Small Steps PSA Series
-TVO Kids’ Crawlspace
-A good majority of Crazy Quilt and Ants In Your Pants
There’s quite a bit tbh, I just can’t remember everything at the moment.
There's probably a lot more that we just don't realize are lost. Like for instance I didn't know Yvon Of The Yukon was lost at all. We should just take a random pick from some Canadian past programming and see where it is now. There was so much out there.
Oh and I remember something that is lost at least I think it is:p One of the music videos from Ants In Your Pants. The short comedy clip featuring some characters from Eric Nagler's Children's sitcom "Eric's World" It featured a young girl in a lobster outfit singing on a stage in front of a bunch of people in a restaurant singing how "I'm not the kind of creature that you eat" There was a laugh track as well. I found it once before in pretty poor quality on YouTube but haven't been able to find it again. And I don't think I seen it in Lickity Split's uploads either. It was so short as well probably one of the shortest music videos on the show.
Crashbox. This show has 12 missing episodes along with other lost media and I'm currently searching for them with little to no luck. The show was educational and still runs on HBO Family to this day. It was really weird and crazy for a kids show and because of that most kids thought it was something they made up or a fever dream.

I remember playing an old game on Nick Jr's website back in 2007 or 2008 called Little Tikes Safetytown, where you would help Cozy Coupe drive safely around town by answering safety questions. It was also on Little Tikes' old website. I checked the Wayback Machine for it, but it is not archived. It is a flash-based .swf game, and I was wondering if any from-home internet archiving enthusiasts or anyone for that matter saved it. If so, please let me know and send me a copy if possible. I second littlest pet shop online, there's plans to make a rewritten for it but from what I understand it's a WIP, but my addition is the OST for the game. I remember one of the overworld BGMs vividly and it was super cute and nice sounding! Hopefully the rewritten will have the track!!

Not sure if any of these are lost since you could probably find bootlegs uploaded to YouTube and elsewhere if you know where to look, but they're definitely rare and often unreleased on DVD, Blu Ray, or streaming. If they do have a physical media release, it's usually in the form of VHS tapes or maybe DVD's that are long out of print and hard to find at a good price.
Some of the more popular ones did get VHS and early DVD releases or can be found on YouTube and elsewhere, so maybe not "lost" but definitely rare.
