I'm going to say that the entire soundtrack for Super Paper Mario is absolutely perfect, with way too many great tracks to list. It's a shame that the soundtrack for this game has never been rereleased in any form because this game has a lot of the best Paper Mario themes out there and perfectly fit the themes of the game's story and mood.

Here is a video on YouTube (with timestamps so I can easily find my favorite tracks to listen to) that has the entire OST of Super Paper Mario (personal favorites for me include "Dimentio, Charming Magician", "Castle Bleck", "The Ultimate Show", "Bounding Through Time" and the "Credits" theme).
